These keto friendly Donuts have only 1g of net carbohydrates per donut and are another fantastic recipe by Francesco and Michela (aka HungryFitty ) who also had the patience to calculate all the macros as well as devising the recipe, which is really super tasty ( especially if you love white chocolate).
Keto Friendly White Chocolate Donuts
Ingredients for 8 Donuts
For the dough:
- 60g of AFRUSE Degreased Spanish Almond Flour
- 30g of defatted coconut flour
- 1 tablespoon of Psyllium Powder
- 1 teaspoon of xanthan gum
- 240ml of water
- 50g of coconut oil
- 40g of erythritol
- 3 lightly beaten eggs
- 5g of Franky's Bakery white chocolate flavour
- 1 teaspoon baking powder
For the glaze:
- OKONO Keto Friendly Macadamia Nut White Chocolate 80g
- 20g macadamia nut flakes
Method:
- Preheat the oven to 220°C.
- Grease and flour (with coconut flour) a donut pan. Alternatively, line a baking sheet with parchment paper and draw circles of equal diameter.
- Whisk together the almond flour, coconut flour, psyllium husk, and xanthan gum in a medium bowl.
- Meanwhile heat water, coconut oil, erythritol, flavoring and salt in a saucepan until boiling. Turn the heat down to low and add the flour mix, stirring constantly to incorporate. Continue to cook and stir until the batter pulls away from the pan. At this point, transfer the dough back into the bowl and let it cool for 5 minutes.
- Add one egg at a time, mixing with an electric mixer on medium/high speed until fully incorporated. Make sure you mix the dough for 2 minutes after adding the last egg, the final texture should be very stretchy, so incorporate the baking powder as well.
- Let the dough rest until it reaches room temperature (about 15-20 minutes).
- Pour the dough into a donut mold and cook for 15 minutes at 220°C, then lower the temperature to 180°C and continue to cook for 17-20 minutes until golden brown.
- Once cooked, let the donuts rest in the mold for 10 minutes before removing them.
- For the glaze, melt the white chocolate in a bain-marie, pour it on the donuts and decorate with some flaked almonds: your sweets are ready and all you have to do is taste them!
