This ice cream is super light, sugar free and easy to prepare (even without an ice cream machine). Everyone likes the vanilla flavor a bit but you can obviously change it with different flavors as you like.
Ingredients for 4 portions:
- 240g 0% fat Greek yogurt
- 240ml milk with 2% fat (do not use vegetable milk, it doesn't turn out as well)
- 1 and a half teaspoon of vanilla extract
- 1 teaspoon stevia drops (preferably vanilla)
- 1/2 teaspoon xanthan gum
- 1 pinch of salt
Preparation :
- The night before, put the bowl of the ice cream maker in the freezer (the ice cream maker is much better, I warn you).
- In a large bowl combine all ingredients and use the electric mixer for about 1 minute until combined.
- Quickly take the basket of the ice cream maker out of the freezer (it must be as cold as possible), put the mixture in it and let it go
- For 15/20 minutes until it reaches a nice consistency. Serve immediately, it tastes better.
- If you don't use the ice cream maker, put the mixture in a flat freezer container, leveling it as much as possible. Leave it in the freezer for 2-3 hours then
- Take it out and mix the mixture by breaking the pieces of ice with a spatula every thirty minutes until you have a good consistency.
