This very easy recipe is really a joker for sudden ice cream cravings, just put a few banana pieces in the freezer (which is always useful for healthier ice creams and also for smoothies) and in a few minutes you can enjoy a delicious and healthy ice cream with Pecan nuts without sugar and without lactose.
Ingredients for 4 portions:
- 2 peeled bananas, cut into chunks and put in the freezer the night before
- 1 teaspoon of vanilla extract
- 2 heaping tablespoons pecans
- about 60g of thick almond milk (the one in the can)
- A pinch of salt
Preparation:
- If you have frozen the bananas in pieces the night before, otherwise you have to leave them in the freezer at least an hour before proceeding.
- Place the chopped bananas in the food processor and blend well until creamy (about 5 minutes) then add the coconut milk, pecans, vanilla and a pinch of salt. Operate the blender again, stopping it every now and then to ensure that everything blends well with the spatula, push upwards what is left on the bottom.
- Enjoy the ice cream!! The best with a little caramel syrup on top (there are some without calories but also naturally sweetened, you can choose)
