Gingerbread cookies in a sugar-free, low-carb and keto-friendly version. I always like these spiced biscuits but it is during the Christmas period that they are usually found or prepared, even as a gift for Christmas. This version that I propose is obviously sugar-free and low in carbohydrates, a good mix of spices is essential for success.
Gingerbread Men Sugar Free & Low carb
Ingredients for 4 portions
- 130g of low carb almond flour
- 150g of softened butter
- 130g sweetener 1:1 (xylitol or Sukrin:1)
- 15g of skimmed cocoa
- 1 teaspoon gingerbread spice
- 1/2 teaspoon ground cinnamon
For the white icing
- 1 egg white
- 2 tablespoons of lemon juice
- 150-200g of Sukrin powder
Preparation
- 1) Preheat the oven to 175°C top/bottom heat
- 2) Mix the defatted almond flour, butter, sweetener, cocoa and spices in a bowl and knead with your hands until the mixture is compact
- 3) Shape the dough into a ball, wrap it in plastic wrap and put it in the fridge for an hour
- 4) Roll out the dough (not too thin) between two silicone mats or sheets of baking paper
- 5) Now cut out the gingerbread men and place them on two baking trays lined with baking paper
- 6) Bake for 8-10 minutes at 175°C high/low heat and then leave to cool
For the glaze
- 1) Whip the egg white with a whisk until stiff and gradually add the powdered sweetener. Whip until the mixture appears thick and shiny and in the meantime add the lemon juice
- 3) Put in the sacred few and decorate the cookies (cold) as you like
