A very easy recipe but just as good. Beetroot hummus is healthy and delicious spread on bread or used as an accompanying sauce for raw vegetables. Few carbohydrates and lots of taste as well as a beautiful bright purple color that makes you happy.
Ingredients:
- 2 large clean beets
- 1/2 lemon, juice and finely grated peel
- 1 minced garlic clove
- 2 tablespoons of tahini
- 1/2 teaspoon salt
- A pinch of pepper
- 4 tablespoons of EVO oil
Method:
- Preheat the oven to 190°
- Wrap the beets in pieces of aluminum foil and place them on a baking sheet. Cook for about 1 hour until they are tender enough.
- Remove from the oven and put them in the refrigerator to cool for about 1 hour
- Once cold, peel them and put them in the blender together with the other ingredients until you get a thick cream. Taste to adjust the salt.
- Place in the refrigerator for an hour before consuming it.
- I love it spread on bread and it looks great with avocado on a slice of wholemeal bread with seeds
