Easy to make, good and very healthy, this avocado salad with apple and cucumber is really a different idea to enjoy avocado. If you accompany it with a source of protein, it turns into a perfect lunch.
Ingredients for 4 portions:
- 2 cucumbers
- 2 avocados not too ripe
- 2 apples (Pink Lady or Gala in short, not too sweet and crunchy)
- 125g plain yogurt (fat or whole of your choice)
- 25g of dried cranberries
- 30g of coarsely chopped walnuts
- 6-7 chopped mint leaves
Preparation:
- Cut cucumbers, avocados and apples into small, roughly equal pieces.
- Mix the walnuts, mint and cranberries into the cold, refrigerated yogurt. Leave it for five minutes to infuse and then season the salad with this sauce.
