These coconut and almond protein balls are super easy to make and are suitable for those on a low-carb and even ketogenic diet. These are the "fit" and sugar-free version of the sweets that start with an R and end with "ello" (because you know I can't spell the whole name, in case someone gets pissed). Low carb and keto friendly protein coconut and almond balls
Ingredients for about 20 balls
- 80ml of coconut cream
- 30g of coconut oil
- 50g of coconut butter
- 25g of erythritol powder
- 60g of unflavoured collagen powder
- 10g of peeled almonds
- 100g of grated coconut in fine flakes
Preparation
- Melt the coconut oil in a bowl in the microwave.
- Melt the coconut butter in the cling film in the microwave by heating it for 20 seconds, then knead and repeat until well blended.
- Mix all the ingredients (except 20 g of grated coconut) together until you get a homogeneous and sticky mass.
- Place the mixture in the refrigerator for 10 minutes to firm up a bit.
- Take about 1 tablespoon of the mixture, place an almond in the center and form balls by rolling the mixture between the palms of your hands.
- Roll the balls in the remaining shredded coconut.
- Place the coconut balls in the fridge for an hour.
TIP: If you can't find peeled almonds, you can simply pour hot water over the almonds and peel them.
