There are many versions of vegan pancakes but almost all of them contain bananas to make up for the absence of eggs. Here is a banana-free, gluten-free and lactose-free vegan pancake recipe for delicious American-style desserts to be enjoyed for breakfast with fresh fruit or sweet syrup.
Ingredients for 6 pancakes:
- 120g of unsweetened apple juice
- 120g of vegetable milk
- 1 teaspoon of lemon juice
- 1 tablespoon of liquid natural sweetener
- 1 teaspoon of vanilla extract
- 150g certified gluten-free oatmeal)
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 pinch of salt
Preparation :
- Mix together apple juice, milk, sweetener, lemon juice and vanilla add dry ingredients, mix until lumps are eliminated but no more (or they will be stiff)
- Calculating that 6 pancakes should come, take part of the batter and place it in an already hot non-stick pan. Adjust the heat to medium-low and cook for about 4-5 minutes until the sides brown then turn and cook another 4-5 minutes.
- Repeat for the six pancakes then top with fresh fruit or sweet syrups.
