Teff flour is gluten-free and has a low glycemic index, making it an excellent alternative to wheat flour for diabetics and celiacs, but also for athletes. Teff is a very small cereal originally from Ethiopia which, precisely because of its size, is ground whole, this improves its fiber content but also mineral salts and vitamins. This flour can be used in place of more traditional flours, has a slight taste of nuts and is particularly suitable for sweet recipes even if its most famous use is as a fundamental ingredient of injera bread, a typical African one.
