Guar gum is a powerful thickener made from Guar seeds, a plant native to India and Pakistan. It is gluten-free and very versatile, very little is needed to thicken creams or sauces but also to "hold together" dietetic doughs made with ingredients that would otherwise end up unbinding. Widely used for recipes with reduced carbohydrate content (it provides zero carbohydrates). in the "Instructions" tab you will find some ideas for dosing it.
