The pizzelle (also known as ferratelle) are made with a dough based on wholemeal flour (Mastro Pizzella uses only locally produced wheat in Abruzzo, without the use of pesticides) similar to that of biscuits but lighter which is cooked using a particular iron which resembles a waffle iron.
