The soft candies (type of toffee) in a protein and sugar-free version have really been a discovery, have you ever thought of preparing them yourself? I found this recipe from Xucker and I must say that they are very good, you can make them the flavor you want by changing the flavor of the proteins for example.
Lemon protein soft candies
Ingredients for 20 candies
- 40g of whey protein
- 50g Xucker Erythritol Powder
- 12g of coconut oil
- Lemon peel
- Juice of half a lemon
- 1 pinch of salt
Method
- Mix all the ingredients until you have a consistent and homogeneous mass.
- If the dough is too sticky, add some whey protein or erythritol powder.
- The mass becomes more compact the longer it is kneaded.
- Form a snake and then cut it into slices with a sharp knife forming candies (like dumplings).
- Put the candy in a resealable container. Just make sure they are not touching (they are still very sticky).
- Leave to firm up in the fridge for a few hours.
