Chia pudding is a type of pudding that is very easy to make and really delicious, even in this version without sugar and with few carbohydrates. Perfect as a dessert but also for a different kind of breakfast.
Chia pudding with chocolate and coffee
Ingredients for one serving
- 30g of chia seeds
- 60ml of coconut milk
- 120ml of iced coffee (flavored maybe!)
- 10g of cocoa powder
- 20g of xylitol (or 30g of erythritol)
- 20ml of MCT oil
Method
1) Briefly blend the chia seeds to make them a sort of flour (not too fine though)
2) Add the other ingredients
3) Put it in the fridge to firm up (the longer you leave it in the fridge, the more solid it will become)
