Making muffins isn't difficult but making sugar-free, low-carb chocolate chip muffins with less than 100 kcal each? You have to be much better obviously, know alternative doughs and fit chef tricks. Or use the Lo Dough mix for sponge cake and in a moment you will find yourself enjoying muffins that are not only delicious but also ultra light without sugar and low carb.
The mixture is a vanilla dough to which you can add other ingredients to your taste, in this case we have added sugar-free chocolate flakes.
Vanilla muffins with sugar-free chocolate chips
Ingredients for 6 muffins
1 bag of Lo Dough vanilla sponge cake mix
240ml of water
100g of dark chocolate without sugar RED
Preparation
- Whip the contents of the bag with the water with an electric whisk to obtain a homogeneous mixture.
- Add the coarsely chopped chocolate
- Divide the batter among 6 muffin cases
- Bake in a preheated oven for about 20-22 minutes at 180°.
NB Lo Dough recommends placing a basin of water in the oven during cooking, we have not done this and they are equally successful but it also depends on your oven, you have to experiment.
