These low carb and keto friendly crackers are very simple to prepare, very good and can be customized with your favorite seeds. The recipe is from Chiara Rozza who, after developing a "normal" version of these crackers, tried to modify it by replacing the flour with NoCarb fiber flour. The result was truly amazing, try this recipe and let me tell you if you liked it.
Low carb seed crackers
Scarce ingredients for two trays
- 250 g of various seeds (pumpkin seeds, flax seeds, sunflower seeds, etc...)
- 150 g of Nocarb fiber flour
- about 160 g of water
- 50 ml of extra virgin olive oil
- salt
- Spices and herbs of your choice
Preparation
- In a bowl mix the dry ingredients: seeds, flour and salt.
- Add the liquids (oil and water) to the mixture.
- Mix with a spoon (then help yourself with your hands) until you get a homogeneous mixture, divide it into two parts.
- With the help of a spoon, place it on a sheet of baking paper, cover with another sheet and roll out with a rolling pin until you obtain a thickness as thin as that of a normal cracker.
- Remove the sheet, engrave the surface obtaining rhombuses or squares.
- You can still season with a veil of oil if you want them tastier and distribute a little salt on the surface.
- Bake in a hot fan oven at 180°C for about 20 minutes.
- Remove from the oven, divide into crackers and store once cooled in a closed glass or tin container.
- They keep fragrant for several days.
