This recipe is really smart and very fast, in an instant you will get a neutral muffin to accompany sweet or savory dishes. With a few small additions, however, it will turn into a light and delicious treat or even a savory bite to break hunger. Gluten-free, sugar-free, lactose-free and low in carbohydrates.
Ingredients for a muffin:
- 1 egg
- 2 tablespoons coconut flour*
- A pinch of baking soda
- A pinch of salt
Preparation :
- Grease a single-portion porcelain stencil (technically called ramekin) or a large long coffee cup.
- Mix all the ingredients so that there are no lumps
- Cook in the microwave at maximum power for 45 seconds/1 minute (or in the oven for 12 minutes at 200°)
This base lends itself to different variations , both sweet and savory, here are some that are obtained simply by adding to the base above:
- A teaspoon of sweetener to have a sweet muffin
- Two teaspoons of almond or peanut butter and 1 teaspoon of sweetener
- A teaspoon of sweetener and 1 teaspoon of ground cinnamon
- Two tablespoons of grated cheese and a teaspoon of chopped chives
